(The yeoman in second picture is a lieutenant, judging from the rank insignia. She's also William Shatner's daughter Melanie.)

Yeoman is a Starfleet title with administrative and clerical duties. Starfleet uses different rates of yeoman including "yeoman third class" as seen with Tina Lawton (Charlie X). Some yeoman, such as Janice Rand, were enlisted personnel during their time in this position. Gene Roddenberry always imagined a pretty young woman as his Star Trek captain's personal assistant, writing the first yeoman on Trek as Chris Pike's young Yeoman Colt in The Cage. There was a Yeoman Smith in Where No Man Has Gone Before, before the regular character of Yeoman Janice Rand was established. Since these were all different versions of the same character, and many other yeomen (or yeowomen) were established later as replacements for Rand when Grace Lee Whitney left the series, it gave the appearance that Starfleet only awarded this grade to pretty young females, although this hardly seemed plausible. However, male yeomen appeared in both The Animated Series and the Star Trek Movies. Additionally, Pike's comment in the "The Cage" that he cannot get used to seeing women on the bridge, indicates that his previous yeoman was male.

The likelihood, given that Starfleet rates (the proper terms for ranks) correspond to those in use in the United States Navy, is that "yeoman" refers to the job specialty, or "rating", of the individual in question rather than a rate (rank) of its own. A yeoman in this case is one who perform administrative and clerical duties, which fits the function of those referred to as "yeoman" in Star Trek.

An unnamed yeoman aboard the USS Enterprise-A

"When I get my hands on the Headquarters genius that assigned me a female yeoman...
What's the matter Jim, don't you trust yourself?
I've already got a female to worry about. Her name's the
Enterprise."
– James T. Kirk and Leonard McCoy discussing Yeoman Janice Rand, 2266 ("The Corbomite Maneuver")

Yeoman was a Starfleet title during the 23rd century with administrative and clerical duties, such as carrying a Starfleet tricorder and retrieving information for a starship's captain, or announcing one's arrival with a boatswain's whistle. Throughout the 2260s and 2270s Yeomen were typically young females but that was not exclusive, as there were also male Yeomen in the 2290s. (Star Trek VI: The Undiscovered Country)

Some yeoman, such as Janice Rand, were enlisted personnel during their time in this position. Yeoman could also hold the rank of an officer, as seen with an unnamed yeoman assigned to the USS Enterprise-A, who wore an officer's uniform with the rank of lieutenant. (Star Trek V: The Final Frontier)

There were different rates of yeoman, as seen with "yeoman third class" Tina Lawton. (TOS: "Charlie X")

Background information

Gene Roddenberry always imagined an attractive young woman as his Star Trek captain's personal assistant, writing the first yeoman on Trek as Chris Pike's young Yeoman Colt in "The Cage". However, Pike states in the episode that he cannot get used to seeing women on the bridge with the exception of Number One, indicating that his previous yeoman was male. During the run of the original series, only female yeomen were featured. Male yeomen later appeared on screen in both Star Trek: The Animated Series and the Star Trek films.

Given that Starfleet ranks typically correspond to those of the United States Navy, "yeoman" most likely refers to the job specialty, or "rating", rather than a rank of its own. A yeoman in this case is one who performs administrative and clerical duties, which fits the function of those referred to as "yeoman" in Star Trek.

In foreign translations of Star Trek, the yeomen of TOS were usually not referred as yeoman, as their title was changed to "corporal", "sergeant" or another naval rank.
