A vegetable was a type of plant matter which was considered appropriate for use as food. Some non-plants, like mushrooms and other fungi were sometimes considered to be vegetable matter. The definition generally excluded nuts, grains, herbs, spices, and sweet fruits (although some fruits, like tomatoes, were called vegetables).
While many vegetables were known to originate on Earth, there were many otherworldly variations of familiar Human foodstuffs. The term "vegetable" can also apply to a person who has suffered brain damage. Kor once said that he would turn James T. Kirk into a vegetable when the Klingon Empire and the United Federation of Planets were engaged in the First Klingon-Federation War. (TOS: "Errand of Mercy")
Vegetables formed the main ingredients of vegetable soup and vegetable bouillon. (TNG: "Attached"; VOY: "Eye of the Needle")
The Bajoran farmer Mullibok cultivated several sorts of vegetables and roots on his farm on the Bajoran moon Jerrado. He started to prepare them when he invited Kira Nerys for supper. (DS9: "Progress")
On Rom's Naming Day, Quark substituted the presents for old vegetables. (DS9: "Rivals")
Joseph Sisko grew his own vegetables for use in his restaurant. Benjamin Sisko and his brothers cultivated them every day. (DS9: "Paradise", "Homefront")
Benjamin later grew his own vegetables in one of Deep Space 9's hydroponic gardens. He used some of those vegetables in a Thanksgiving dinner he cooked for the senior staff in 2372. (DS9: "Blaze of Glory")
Feragoit goulash, a food prepared by Neelix, was made out of vegetables. (VOY: "Parallax")
In 2375, the USS Voyager crew used cargo containers filled with vegetables to fool the Devore into believing that the Brenari refugees they rescued earlier were still hidden aboard in transporter suspension. (VOY: "Counterpoint")
