An unnamed Oberth moments before being destroyed by the Borg

This unnamed Oberth-class starship at Memory Beta, the wiki for licensed Star Trek works was in service to Starfleet in the latter half of the 24th century. The starship was destroyed by the Borg in the Battle of Wolf 359 in 2367, along with 38 other starships. Just as Benjamin Sisko entered his quarters on board the USS Saratoga, during the evacuation, this Oberth-class starship was hit by a cutting beam pulse from the Borg cube. The cutting beam destroyed the front saucer section of the ship in a massive explosion, sending the derelict hulk hurtling past the Saratoga. (DS9: "Emissary")

The name on the model was illegible on screen. According to the Star Trek Encyclopedia (3rd ed., pg. 470), the Oberth-class starship lost in the Battle of Wolf 359 was named USS Bonestell with the registry of NCC-31600, named after astronomical artist Chesley Bonestell. According to the entry, the wreck first appeared in "The Best of Both Worlds, Part II".
According to the novel Pathways by Jeri Taylor, Kathryn Janeway served on the Bonestell from 2362 to 2365.

In 2371, an unnamed Oberth-class starship at Memory Beta, the wiki for licensed Star Trek works assisted the USS Farragut and an unnamed Miranda-class starship in recovering the crew of USS Enterprise-D from Veridian III, following the forced crash-landing of its saucer section. (Star Trek Generations)

The TNG eBook, Slings and Arrows: "The Insolence of Office", gives this ship's name as the USS Trosper.

Battle of Sector 001

Oberth class, first contact

Two Oberth-class vessels near Earth

At least three unnamed Oberth-class starships fought against the Borg in the Battle of Sector 001 in 2373.

One destroyed vessel is seen quickly after the Defiant maneuvers past a destroyed hulk on a strafing run on the cube. Another two vessels were on the far side of the attacking Borg cube when the cube was first engaged by the USS Enterprise-E. (Star Trek: First Contact)

This marked the final appearance of the Oberth-class in the Star Trek series.
