There have been at least two Federation starships known to bear the name USS Hermes.

USS Hermes (NCC-585)

The first starship Hermes was the prototype for the Hermes-class scouts, in service during the mid-23rd century.

This ship was never directly seen on screen, but it IS mentioned by name and registry number in background dialogue in Star Trek: The Motion Picture. Its schematics (taken from Franz Joseph's Star Trek Star Fleet Technical Manual) appeared on the Enterprise computer displays in Star Trek II: The Wrath of Khan and Star Trek III: The Search for Spock.

USS Hermes (NCC-10386)

The second starship Hermes was an Antares-class starship in service during the 24th century.

The ship served as part of the task force that blockaded the Klingon-Romulan border during the Klingon Civil War in early 2368. The ship had previously been docked at Starbase 234 for major repairs. (TNG: "Redemption, Part II")

The name is presumably a tribute to Hermes, the ancient Greek messenger-god.
