2 cups dried pinto, red, or kidney beans
 
½ pound bacon, salt back, or Canadian bacon, coarsely chopped
 
1 small white onion, or ¼ large Bermuda onion
 
2 tablespoons molasses
 
2 tablespoons honey
 
1 ½ tablespoons mustard seed
 
½ cup Tennessee whiskey or Kentucky bourbon
 
2 cups beef bouillon stock, or water from the boiled beans
 
1 tablespoon Worcestershire sauce
 
2 teaspoons sea salt
 
1 teaspoon liquid smoke

[[Spock]] was impressed by their taste, noting that they were "surprisingly good", but that he was not familiar with one of its flavorings. This was revealed to Spock to be the "secret ingredient", which was [[Tennessee whiskey]]. ({{film|5}})
First soak beans for 2 hours, and drain. Then cover with water and boil the beans for about 2 hours, reducing heat to a low boil for the last ½ hour, until they are tender. Preheat oven to 300 degrees F. Fry bacon or slightly brown the salt back. Drain beans, reserving stock for later if you don’t use beef stock. Add the rest of the ingredients to the beans, including the bacon. Add half the bean stock or beef stock and stir thoroughly. Bake for 1 hour at 300 degrees in a heavy covered deep pot, then reduce heat to 200 degrees and bake for another 8 hours, making sure they don’t become too dry. For the last half hour, add some of the beef or bean stock and increase heat to 275 degrees. Serves 6-8.

Spock eats some Southern baked beans.

Southern baked beans were a McCoy family recipe that extended several generations and well into the 23rd century. Leonard McCoy was handed down the recipe from his father.

The recipe was made from beans, combined with various ingredients and baked.

During a shore leave-camping trip to Yosemite National Park, in 2287, McCoy warmed up a batch of his famous beans over the campfire. Spock was impressed by their taste, noting that they were "surprisingly good", but that he was not familiar with one of its flavorings.
