Sea bass is a type of fish found on Earth.
When Mark Latrelle visited a fish restaurant in San Francisco with Malcolm Reed sometime prior to 2151, Latrelle had sea bass but Reed was more interested in the waitress Maureen. (ENT: "Silent Enemy")
As the two were in San Francisco, Latrelle most likely referred to the giant sea bass, found off the Californian coast.
The ration packs aboard Enterprise's shuttlepods included Chilean sea bass. (ENT: "Shuttlepod One")
