Rice wine (or sake) was an alcoholic beverage from Japan on Earth, made from fermented rice starch.

In 2266, Hikaru Sulu, while trapped on Alfa 177, jokingly asked for coffee to be let down from the USS Enterprise via a rope, or rice wine if they were out of coffee. (TOS: "The Enemy Within")

Kathryn Janeway, whose recollection of the decision made during the 77th Emperor's Cup, which she was attending, differed from that of Chakotay and Tuvok, was teased by Chakotay, who stated that perhaps she might have missed the decision because she must have been ordering sake at the time. (VOY: "Latent Image")
