Rodeo Red's Red-Hot, Rootin'-Tootin' Chili was a chili con carne used in the 20th century.

While brushing up on "classic American cuisine" cuisine, Neelix created Rodeo Red's Red-Hot, Rootin'-Tootin' Chili for the crew in the mess hall. Some crewmembers encountered acute functional dyspepsia due to the number of jalapeños in the recipe. Neelix noted to Tom Paris that he would lower the amount of jalapeños (which he pronounced "juh-LOP-ee-nos") he used in the chili the next time he made it. (VOY: "Message in a Bottle")
