Rubenstein's acting career was just like his life-brief. Brief by Hollywood standards,but he did have a meaningful acing tenure. 1977 saw Rubenstein in Contract on Cherry Street with ENT guest stars Michael Nouri and Tucker Smallwood. His next role was in 1979's The Rose with Jonathan Banks.

The 80's held fruitful work for Rubenstein. 1981 had him in A Small Killing with Nicholas Guest, Andrew Prine and Satie player Jean Simmons. A year later, Rubenstein acted alongside Lawrence Monoson in the coming of age drama The Last American Virgin. In 1984, Rubenstein landed a small role in Getting Physical with an uncredited Spice Williams. Also that year was Kidco with Vincent Schiavelli. There was then the telefilm Gone Are the Dayes directed by Gabrielle Beaumont. The only film in 1985 in which Rubenstein appeared was The Boys Next Door with Yesterday's Enterprise guest star Christopher McDonald.

1986 was a great year for Rubenstein starting with the Rodney Dangerfield comedy mega-hit Back To School with Trek alumni DS9 guest star Adrienne Barbeau, DS9 lead Terry Farrell, TOS guest player Sally Kellerman and VOY star Robert Picardo, then Intimate Encounters with Nakamura actor Clyde Kusatsu and Body Slam with Ellen Albertini Dow. In 1987, Rubenstein acted in the goofy Andrew McCarthy comedy Mannequin also starring Kim Cattrall.

For 1988, Rubenstein played parts in Elvira, Mistress of the Dark with Trek alum William Morgan Sheppard follwed by another telefilm starring Sylvester Stallone, Crossing the Mob with Joey Aresco, Robert Costanzo and Louis Giambalvo. A really good year followed in 1989, first The Runnin' Kind with James Cromwell and Kenneth Tigar and reuniting with Sylvester Stallone and also with fellow action star Kurt Russell in the buddy-cop classic Tango & Cash with many Trek faces. Joining Rubenstein were Dukat actor Marc Alaimo, Roy Brocksmith, Richard Fancy, Teri Hatcher, Clint Howard, Trek vet Glenn Morshower and TOS guest actor Michael J. Pollard. Aterwards was 1990's Robocop 2 with Roger Aaron Brown, Gabriel Damon, Robert DoQui, Galyn Görg, Stephen Lee, Tzi Ma and Mark Rolston. Then finally 1991's Another You, Rubenstein reunited with Michael J. Pollard and Vincent Schiavelli. Also in this film were Craig Richard Nelson and Biff Yeager. In 1992, Rubenstein suffered at the hands of a heart attack and died at the seemingly young age of 51.
