An elephant was a large Earth mammal.
In 2369, Captain Edward Jellico's son gave him a drawing of what Jellico believed to be an elephant. He showed this drawing to Deanna Troi. (TNG: "Chain of Command, Part I")
There were plans for an elephant to appear in "Shore Leave", but the plans never materialized. [1]
