Witz has worked exclusively with Paramount Pictures as a production manager since 2003. His films since that time have included Lemony Snicket's A Series of Unfortunate Events, War of the Worlds and Dreamgirls. He first worked with Star Trek director/producer J.J. Abrams and writers Alex Kurtzman and Roberto Orci (among many other Star Trek production staff members) on Paramount's 2006 film, Mission: Impossible III.

Earlier in his Hollywood career, Witz was an associate producer on the 1986 film Hollywood Vice Squad, starring Ronny Cox and Frank Gorshin. In 1991 he produced the horror/thriller Servants of Twilight, starring Bruce Greenwood (currently playing Christopher Pike on Star Trek) and Carel Struycken.

Witz was Unit Production Manager on films such as Buffy the Vampire Slayer (featuring Stephen Root), Jury Duty (starring Charles Napier and Richard Riehle), Halloween: The Curse of Michael Myers (starring Kim Darby), and Paramount's Escape from L.A. (starring Michelle Forbes). He also managed the 2002 Ice Cube/Mike Epps comedies All About the Benjamins and Friday After Next for New Line Cinema.

His next project is Paramount's The Spiderwick Chronicles, opening February 2008.
