Cognac was a type of brandy from the similarly-named French region on Earth.

When Seska offered the captured Chakotay a Kazon drink in 2372, called enemy's blood, she remarked that she had developed a taste for it, though it wasn't a fine cognac. (VOY: "Maneuvers")

When Benjamin and Jake Sisko visited Joseph Sisko later that year, Joseph wanted to open a nice bottle of cognac for his son and him, which he had kept for a special occasion like this. (DS9: "Homefront")
