Anthropology is the study of humans, and can be broken down into Physical anthropology and Cultural anthropology, which themselves have further sub groups. After first contact it seems to have been expanded to include other humanoid species. The Archaeology and anthropology officer was a position on Starfleet starships in the 23rd century. (TOS: "Who Mourns for Adonais?")
Anthropology was also a general course taught at Starfleet Academy during the mid-24th Century. (TNG: "The Game")
